Since you don't code at all your going to struggle, but yeah doom mods would be your best bet. Or if you like streets of rage, a bor mod.

Let me put it as simply as I can, I don't know ANY form of coding, I have a terrible memory so it would take awhile to learn, I just want to make a game for my local dreamcast group, I'd prefer fps or 3d adventure, and I mainly want something that's multiplayer. I understand some games for the pc, such as doom, are very simple to mod or make using an engine and that they have been ported to the dreamcast, in some cases, so I'd also accept modding. And finally, while not a necessity, I'd like to compile it to .cdi as I've had an easier time burning that than anything else.
Edit: oh yeah just ask if you need any more information

Question is how exactly would I go about it because I have doom, actually I think it's quake, and it's in .cdi, I assume I would have to decompile the file and to do the mod. And then also, right now I just want to make a quick mod so this isn't towards it, I have iris downloaded because I'd like to make a full game at some point, how difficult is that?
Nxdoom supports mods, so you can make a mod with a doom level editor, but keeping in mind about the small amount if RAM. Don't think dcquake supports mods.
As for iris you still need to be able to code to use it.
If you have never have made a game before then starting of on the dc is a really bad idea. Start of by making games on the pc, like a flash game.
